Strawberry Lemonade Cupcakes

I am soooo ready for summer... and everything that comes with it!  I'm ready for the WARM, DRY weather.  I'm ready for all the fresh fruits! I'm ready for all the garden produce! I'm sooo ready to go camping, lounge by the rolling river, & cook a whole bunch of yummy food in the Dutch Ovens! Well, you get the idea, right?

One of my favorite things about summer is FOOD!  Surprise, surprise... right? Hee Hee Hee!  I LoVe Strawberry Lemonade!  It's one of my favorite summertime drinks!  Since, it won't quit raining and I've been wrapped in a blanket all weekend, I decided to bring a little bit of summer into my home in the form of a yummy cupcake! {or 36 of them}  Too bad I'm not artistic and can't paint a big ole' mural of a beach up on a wall.  Of course, it would only be able to fool me until I walked outside to do chores!  And then of course, when it's 100 degrees outside and I'm begging for a cool breeze, I'd have to paint over the damn thing! So scratch that! :)

Anyhow!  These cupcakes were fantastic!  If you are not in high altitudes, you may only want to make 24 cupcakes... but I prefer not to have mine spilled all over the bottom of my not-so-clean-already oven!
And the frosting totally makes the cupcake perfect!  Oh my!  Baby girl decided there wasn't enough on each cupcake so she just grabbed a spoon!  I just love her!

Strawberry Lemonade Cupcakes with Lemon Cream Cheese Frosting
From Cupboard to Cupboard
printable recipe

For Cupcakes:
1 package white cake mix [I like Betty Crocker]
1 (3 oz) package strawberry jello
1 cup mashed fresh strawberries [1 1/2 cups whole=1 cup mashed]
1 cup vegetable oil
1/2 cup buttermilk
4 eggs

In a large bowl, stir together cake mix and jello mix.  Make a well in the center and pour in mashed strawberries, oil, milk, and eggs.  Beat on low speed until blended.  Scrape bowl and beat 2 minutes on medium speed.  Pour batter into prepared cupcake pans... I used cupcaked liners.  36 cupcakes for high altitude. 24 cupcakes otherwise.
Bake at 350 for 15-20 minutes or until cupcakes are done.  Do the ole' toothpick test :)
Cool on wire rack until completely cooled!

For Lemon Cream Cheese Frosting:
1/2 cup crisco
1/2 cup butter, softened
1 (8 oz) pkg cream cheese, softened
1 tablespoon clear vanilla extract
2 pounds powdered sugar
1/2 teaspoon salt
2 Tablespoons lemon juice
2 Tablespoons lemon curd
1 drop yellow food coloring
1 tablespoon milk if needed

Cream together shortening, butter, and cream cheese until good and smooth.  Add vanilla and combine.  Sift together powdered sugar and salt and slowly add to creamed mixture.  Add lemon juice, lemon curd, and coloring and mix well.  If the frosting is too stiff, add milk.

Frost your cooled cupcakes and garnish however you please.  I had some dehydrated strawberry slices and loved how they looked... simple!

Menu Board Monday Edition #14: Cheese Stuffed Burgers

Happy Monday to all of my friends!
-----------------------------------------------------------------
Please go HERE to enter to win my latest giveaway!
I want to tell you that I am so glad to be back!  My internet has been down for nearly two weeks and I have been going crazy!  I did, however, take advantage of my "time off" and finished up my craft room!  It looks so good and I'm just itching to get some sewing done!

Anyhow!.... I have been CRAVING a good cheeseburger lately!  So, I made us some!  Boy are these good! So good that I wouldn't even worry about adding any condiments.  They pack some punch with flavor and I don't think it's at all necessary to add any ketchup, lettuce, tomatoes, etc... but you feel free to add what you'd like!  I am kinda plain like that :)
This recipe makes 6 large burgers.  It was just my baby girl and I home, so I had 4 burgers left.  I just wrapped each of the 'ready-to-cook' burgers tightly in plastic wrap, the tin foil and placed them in the freezer.  It'll be perfect for when I need to fix a quick burger for lunch.  They are so good!  YUMMY!!!!!

Cheese Stuffed Burgers
From Cupboard to Cupboard

1 cup chopped onion
1/2 cup crushed saltines
1 egg, beaten
1 envelope ranch salad dressing mix
1 Tbsp. Worcestershire sauce
1 garlic clove, minced
1 tsp. pepper
2 lbs ground beef
1 1/2 cups shredded cheddar cheese
3 oz. cream cheese, softened
6 hamburger buns (I like mine toasted)

In a large bowl, combine the first seven ingredients. Crumble beef over mixture and mix well.  Shape into 12 thin patties. I used an ice cream scoop so they were all equally portioned. Then placed them on a large piece of freezer paper and pressed them rather thinly.  Combine the cheddar and cream cheese and spoon onto centers of six patties.  Top with remaining patties and press edges firmyl to seal.  Grill burgers, covered, over medium heat or broil 4 inches away from heat for 5-7 minutes on each side or until juices run clear.  Serve on toasted buns.  YuMmY!

I used a ice cream scoop to make equally portioned burgers
leave a good margin around the edge so you're able to seal them better so the cheese doesn't ooze out!
ready to go on the grill!

Some tears shed, a GREAT recipe, & a giveaway.... for a GREAT cause!

On February 7, 2007 around 8 o'clock pm, after signing papers and driving home in my new car, my phone rang.  It was my parents' number.  I said "hello" in a joyous voice.  Silence was on the other line.... then a gasp. It was my Dad and he couldn't speak.  Immediately my heart sank, as I knew something was wrong.  Then he handed the phone to my Mom.  I kept saying "what's wrong?".  My mom asked me where I was and if I was driving.  At this point I REALLY knew that something was wrong.  Things were racing thru my mind, is it Grandma Jennie? Is it Grandpa or Grandma Williams?  Five devastating words came from my Mom's side of the phone, five words I will never forget.... "Teauna, I have lung cancer"..  The most horrifying words a 26-year old daughter could hear.  I had went from my highest high to the lowest low in a matter of seconds.  I was so stunned.  I asked my Mom questions, "When do you go to the Dr.?.... What time?.... Are they sure?...." Then I got off the phone and it hit me....LIKE A ROCK!  I pulled off the side of the road, and I screamed! I Screamed as loud as I could for what seemed like hours!
The following morning, I met my parents and went to my Mom's first oncolgy appointment. After a couple months of weekly doctor visits and a huge list of different tests, my Mom was finally diagnosed.  The diagnosis.... leomyosarcoma.  The Doctors were as stunned as we were. This is a very rare form of cancer, affecting very few Sarcoma patients, this being the reason for the 2 month testing period before the diagnosis.  Of course, Mom made the decision to get a second opinion from a doctor at a different hospital.  This doctor, a woman I hope to NEVER meet, took all hope away, giving my Mom a maximum of 18 months to live... because "the only way to 'treat' this cancer is with a harsh chemotherapy drug that may just kill you before your cancer chooses to".  Yes, I would love to slap the woman, giving me AND her a reason to NEVER meet!
Mom was treated by an amazing, AMAZING, & compassionate group of doctors.  I am so grateful for them! The surgeries were tough, but she made it thru with her positive thoughts, her faith, & her loved ones by her side.  The tests showed that her hormone therapy wasn't working as well as they hoped in December 2007, and on 13th, she started chemotherapy.  Six gruelling months of that poison being sent thru her veins.  She was tired & weak.  She lost her beautiful hair.  And yet, she never quit smiling! She never quit saying "I'm going to beat this!". The Chemo along with her hormone therapy has now put her cancer into remission. For many that have seen my Mom, they ask me "Are you sure she has cancer?" She looks amazing, still with her beautiful smile on her face.
The same week my Mom started chemotherapy, my Grandma Kay {Dad's Mom} was diagnosed with breast cancer and had to go thru radiation and a masectomy.
As Mom started feeling better and her and dad started getting back into their normal routine, they received another piece of news, to rock us all once again in April  2010. I was at an appointment and had missed a call from Mom. When I returned the call my Mom answered. I could tell she was upset. My Grandma {her Mom} had not been doing well so I assumed things weren't going well for her.  But no....instead I heard,  "Teauna, your Dad has cancer!" Oh My HELL! Really?  Thru my Mom's whole battle she was so strong, and I could hear the fear and the sadness in her voice.  I wanted to reach thru the phone and hug her and never let go.  But instead, I went home, loaded my kids in the car, and drove.... away.  My Dad wanted it to be kept quiet until his doctor was back... IN TWO WEEKS!  I took the kids to Wyoming to see their Dad. I hid in the bedroom of his house there, and I sobbed.  My dad was diagnosed with Prostate cancer.  He had 2 surgeries in November & December of 2010 and is doing exceptionally well.
So now, I'm a 32-year old daughter of two strong-willed, faithful, & blessed CANCER SURVIVORS.  I am so grateful for both of them and the unconditonal relationship that we have with each other.

My Parents...

Since my Mom was diagnosed, we were introduced to the Relay for Life.  What an amazing event to be put on for the many people who have been diagnosed, who have fought, who have won, & even those who have lost their battles with this horrific disease.  My Mom has an amazing friend whom she used to work with that is always on a relay team and has kept my Mom informed of the dates, times & locations of the Relay the last 4 years.  To learn more about the Relay for Life please go here.
My Mom, along with many friends and fellow cancer survivors, have developed a team.  They are the Malad City Tumornators.  Cute, huh?  Well, when you have a team for the Relay for Life, part of the deal is raising money to help find the cure! Wow! Who doesn't want to see this happen? Certainly not me!
One of the fundraisers the "Tumornators" have come up with is a great little cookbook.  This cookbook is compiled of many recipes of Cancer Survivors & loved ones of those who have fought the battle, some won, & some lost.  The "Once Upon A Cure" cookbook is full of 70 pages of  yummy tried and true recipes.  I wanted to try one, so I chose to bake some SOFT SUGAR COOKIES.  They are wonderful! AND SOFT!

If you live around Malad City, Idaho or want to go on a roadtrip for a great cause.... please join the Malad City Tumornators for their BIG fundraiser at the Greenbelt on Saturday, June 25th starting at 9 am.
Some of the events going on that day:
* Yardsale- A yard sale from donations from many... they're always accepting donations of stuff to sale! Remember.... your junk is someone else's treasure!
* Bake Sale- Yummy homemade breads, cakes, cookies, etc!  and YES, I'll be baking for days prior to the sale!
* Mini Relay- A fun walk with prizes awarded.  There is a $10 entry fee for adults.  12 and under walk for free! So bring out your family and join in on the fun!
* Cookbooks- Available for $10! Great recipes! If you are interested in purchasing a cookbook please shoot me an email at teawclark{at}gmail{dot}com.
* Luminaris- These are sacks that are provided by the American Cancer Society.  You decorate the sack as you wish. When the team goes to walk the track on the night of the relay, all of the luminaris will be taken and lit at the track.  These are $10.
* Chain of Hope- Remember when we were kids and we made those fun chains of paper for countdowns? {or was that just me?}... well the Tumornators have a goal. . . they are selling chains for $1.  You can write a simple message on your chain, the name of a loved one, your name,  a word of advice, a word of HOPE, etc.  The links will be combined to form a chain.  Our goal is to have a chain long enough to reach the entire length of one lap (1/4 mile) for the Survivor Lap!  Please join us in reaching our goal!

Gingered Chicken & Spinach Salad

My daughter has been BEGGING me for a week now to make Spinach Artichoke Dip. So when I was at SAM's Club the other day, I decided to buy some spinach.  I just bought one of their big tubs of fresh baby spinach. That is A LOT of Popeye food!  So, on my way home I was thinking of ways I could use the spinach so it wouldn't end up as chicken feed.  This salad immediately popped in my mind.  I once had a recipe for it but it has been misplace over the years.  But for some odd reason, I remember the ingredients.  I think I've only made it 3 or 4 times in the last 10 years or so, but every time I have made it, it is a hit!  The ginger gives it that little "Thai" kick and I just love poppy-seed dressing.  I have had a bunch of emails from people that are starting Weight Watchers and are looking for some healthier recipes.  This would be one!  It doesn't require much dressing because the flavors are distinct with just a little amount.  Measuring this out, it should be around 8 servings.  But with all the veggies, how can you go wrong?

Gingered Chicken & Spinach Salad
From Cupboard to Cupboard

Dressing:
3/4 cup creamy poppy seed dressing {I like Briannas Brand}
2 garlic cloves, pressed
1/2-1 tsp crushed ginger {I buy this in a small jar by the fresh produce}

Salad:
1 bag (6-10 oz) fresh baby spinach leaves
1 bag of broccoli slaw mix
1 cucumber, seeded and sliced (I didn't have one on hand)

Chicken Mixture:
1 lb boneless, skinless, chicken breasts cut into bitesize pieces
1 tsp dried basil leaves
1/4 cup salted peanuts, chopped

For dressing: combine ingredients, whisk together, and set aside.
For salad:  place spinach, slaw mix, {cucumber} in large serving bowl and refrigerate until ready to serve.
For chicken: heat your skillet over medium-high heat.  Spray your skillet with non-stick spray.  Add chicken to hot skillet and stir fry until chicken is no longer pink.  Add basil.  Take off heat, stir in peanuts and toss with 1/4 cup of the dressing.

When ready to serve, toss the greens with the remaining dressing or serve dressing to the side.  Toss chicken with salad.

Menu Board Monday Edition #12 - Pepperoni Pizza Rolls

I have to be honest with you all.....

psst.... get closer so no one else hears my secret!

WE ATE OUT TONIGHT!

Anyhow.... now that I've confessed my sins {and support to the yummy local "pizzaria"}, I thought that I would share one of our FAVORITE "pizza" recipes with you all!  These are so good and they really are simple.  The last time I made them, I used the Lion House Roll dough recipe and doubled it.  I froze the Pepperoni Pizza Rolls that we didn't eat.  When the kids got home from school, they just pulled them out of the freezer {I put them in individual freezer bags} and microwaved them for 1 minute and they thoroughly enjoyed them.  Try it! Your kids would love ya! :) Oh!  And they can even help!  We LOVE kid-friendly recipes in our home!
Pepperoni Pizza Rolls
A From Cupboard to Cupboard original recipe
printable recipe

Either start with your favorite bread dough recipe or just use 1 frozen loaf. If you are using your favorite recipe, let it have it's first rise before rolling out. If your are using frozen dough, let it thaw then follow the following directions.
This is the recipe I use:

Lion House Rolls
2 cups warm water (110 to 115 degrees)
2/3 cup nonfat dry milk
2 tablespoons active dry yeast
1/4 cup granulated sugar
2 teaspoons salt
1/3 cup butter, shortening, or margarine (I use BUTTER)
1 egg
4 1/2 to 5 cups all-purpose flour or bread flour (I use AP Flour)
1/2 cup butter, melted

In a large bowl of an electric mixer, combine water and dry milk powder, stirring until milk dissolves. Add yeast, then sugar, salt, butter, egg, and 2 cups of the flour. Mix on low speed until ingredients are wet. Increase mixer speed to medium and mix for 2 minutes. Add 2 cups flour; mix on low speed until ingredients are wet, then for 2 minutes at medium speed. (Dough will be getting stiff, and remaining flour may need to be mixed in by hand.) Add remaining flour, 1/2 cup at a time, and mix again until dough is soft, not overly sticky, and not stiff. (It is not necessary to use the entire amount of flour.)
Scrape dough off sides of bowl and pour about 1 tablespoon of vegetable oil all around sides of bowl. Turn dough over in bowl so it is covered with oil. (This helps prevent dough from drying out.) Cover with plastic wrap and allow to rise in warm place until doubled in size, about 1 1/2 hours. Sprinkle cutting board or counter with flour and place dough on floured surface. Roll out and shape as desired. Place on greased or parchment-lined baking pans. Cover lightly with plastic wrap. Let rise in warm place until rolls are doubled in size, about 1 to 1 1/2 hours.

Now just roll your dough out to about 1/4 inch thick in a big rectangle just like you were making cinnamon rolls.

Now make some pizza sauce. This is the recipe I use...it's so good!
Mix well together:
Tea's Pizza Sauce
1 can tomato sauce
1 can tomato paste
1 Tablespoon oregano
1 clove garlic, minced
1 1/2 tsp basil
1/2 tsp sugar
1/2 tsp onion salt

Spread the pizza sauce on your rectangle of dough. I just use the back of the spoon to spread it evenly across the dough. Make sure to go to all edges.

I used a combination of shredded parmesan cheese, mozzerella cheese, and colby jack cheese. Then cover with slices of pepperoni.

Now simply roll it in jelly-roll style as if you were making cinnamon rolls. Cut into 3/4-1" slices and place on well greased cookie sheet. Bake at 375 degrees for 15-20 minutes or until golden brown...

Serve with remaining warmed pizza sauce!

Happy Cooking
